Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 4 cloves garlic (minced)
  • 3 tablespoon olive oil
  • cup Cairo Apiaries Honey
  • 3 tablespoon soy sauce
  • 1 onion
  • 1 bell pepper
  • 2 cups broccoli florets
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 2 teaspoon scotch bonnet pepper (finely chopped)
  • 2 carrots (julienned)
  • ¼ cup fresh cilantro (finely chopped)
  • 2 tablespoon lime juice

Instructions

  • Marinate the Shrimp:
In a medium bowl, whisk together Cairo Apiaries Raw Honey, soy sauce, 2 tablespoons of olive oil, minced garlic and chopped Scotch bonnet pepper.
Add the shrimp to the bowl and toss to coat. Let the shrimp marinate for at least 10 minutes.
  • Prepare the Vegetables:
While the shrimp is marinating, prepare the vegetables. Thinly slice the bell pepper and onion, and julienne the carrots.
  • Cook the Vegetables:
Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the sliced onion and bell pepper, stirring frequently for about 2 minutes until they begin to soften.
Add the broccoli florets and julienned carrots, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  • Cook the Shrimp:
Push the vegetables to the sides of the skillet, creating a well in the center.
Add the marinated shrimp to the center of the skillet, spreading them out in a single layer. Cook for about 3 minutes on each side, until the shrimp are pink and opaque.
  • Combine and Thicken (Optional):
Once the shrimp are cooked, stir the vegetables and shrimp together.
Add the remaining marinade to the skillet. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another 1-2 minutes until the sauce has thickened.
  • Finish and Serve:
Remove the skillet from heat and stir in the fresh cilantro and lime juice.
Serve the honey-garlic shrimp stir-fry over cooked jasmine rice or noodles for a complete meal.
