- 1 lb large shrimp (peeled and deveined)
- 4 cloves garlic (minced)
- 3 tablespoon olive oil
- ⅓ cup Cairo Apiaries Honey
- 3 tablespoon soy sauce
- 1 onion
- 1 bell pepper
- 2 cups broccoli florets
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 2 teaspoon scotch bonnet pepper (finely chopped)
- 2 carrots (julienned)
- ¼ cup fresh cilantro (finely chopped)
- 2 tablespoon lime juice
Marinate the Shrimp:In a medium bowl, whisk together Cairo Apiaries Raw Honey, soy sauce, 2 tablespoons of olive oil, minced garlic and chopped Scotch bonnet pepper.Add the shrimp to the bowl and toss to coat. Let the shrimp marinate for at least 10 minutes. Prepare the Vegetables:While the shrimp is marinating, prepare the vegetables. Thinly slice the bell pepper and onion, and julienne the carrots. Cook the Vegetables:Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.Add the sliced onion and bell pepper, stirring frequently for about 2 minutes until they begin to soften.Add the broccoli florets and julienned carrots, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp. Cook the Shrimp:Push the vegetables to the sides of the skillet, creating a well in the center.Add the marinated shrimp to the center of the skillet, spreading them out in a single layer. Cook for about 3 minutes on each side, until the shrimp are pink and opaque. Combine and Thicken (Optional):Once the shrimp are cooked, stir the vegetables and shrimp together.Add the remaining marinade to the skillet. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another 1-2 minutes until the sauce has thickened. Finish and Serve:Remove the skillet from heat and stir in the fresh cilantro and lime juice.Serve the honey-garlic shrimp stir-fry over cooked jasmine rice or noodles for a complete meal.
