Ingredients
- 1 lb mixed vegetables (carrots, sweet potatoes, Brussels sprouts, and sweet peppers) washed and chopped
- 3 tbsp Cairo Apiaries Raw Honey
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 3 cloves garlic minced
- 1 tsp dried thyme leaves
- salt & pepper to taste
- Chopped fresh herbs (such as parsley or rosemary) for garnish optional
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Prepare the vegetables:In a large mixing bowl, combine the chopped vegetables. Ensure they are dry for better roasting.
- Prepare the honey glaze: In a small bowl, whisk together the Cairo Apiaries Raw Honey, olive oil, Dijon mustard, minced garlic, dried thyme, salt, and pepper. This mixture will be your delicious glaze.
- Coat the vegetables: Pour the honey glaze over the vegetables and toss until they are evenly coated. The raw honey adds a delightful sweetness while enhancing the natural flavors of the vegetables.
- Spread on a baking sheet: Line a baking sheet with parchment paper or lightly grease it. Spread the coated vegetables evenly on the sheet, ensuring they are not crowded to allow proper roasting.
- Roast in the oven:Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes or until the vegetables are tender and caramelized, stirring halfway through for even cooking.
- Garnish and serve: Once roasted to perfection, remove the vegetables from the oven. Garnish with chopped fresh herbs if desired. Serve hot as a flavorful side dish or a wholesome main course.
