Ingredients

  • 1 lb mixed vegetables (carrots, sweet potatoes, Brussels sprouts, and sweet peppers) washed and chopped
  • 3 tbsp Cairo Apiaries Raw Honey
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 3 cloves garlic minced
  • 1 tsp dried thyme leaves
  • salt & pepper to taste
  • Chopped fresh herbs (such as parsley or rosemary) for garnish optional

Instructions

  • Preheat the oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the vegetables:
    In a large mixing bowl, combine the chopped vegetables. Ensure they are dry for better roasting.
  • Prepare the honey glaze:
    In a small bowl, whisk together the Cairo Apiaries Raw Honey, olive oil, Dijon mustard, minced garlic, dried thyme, salt, and pepper. This mixture will be your delicious glaze.
  • Coat the vegetables:
    Pour the honey glaze over the vegetables and toss until they are evenly coated. The raw honey adds a delightful sweetness while enhancing the natural flavors of the vegetables.
  • Spread on a baking sheet:
    Line a baking sheet with parchment paper or lightly grease it. Spread the coated vegetables evenly on the sheet, ensuring they are not crowded to allow proper roasting.
  • Roast in the oven:
    Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes or until the vegetables are tender and caramelized, stirring halfway through for even cooking.
  • Garnish and serve:
    Once roasted to perfection, remove the vegetables from the oven. Garnish with chopped fresh herbs if desired. Serve hot as a flavorful side dish or a wholesome main course.
