In a pitcher, combine the lime juice, water, honey, and grated ginger. Stir until the honey is dissolved.
Taste and adjust the sweetness by adding more honey if desired.
Refrigerate the mixture for at least 30 minutes to allow the flavors to infuse.
Use a strainer to remove the grated ginger if desired
Fill glasses with ice cubes and pour the honey ginger limeade over the ice.
Garnish with lime slices and fresh mint, if desired.
