Instructions
Make the marinade:
In a bowl, whisk together honey, lemon juice, zest, garlic, onion, paprika, soy sauce, and olive oil.
Marinate the chicken:
Toss chicken in marinade; refrigerate for 1 hour (overnight for best flavor).
Skewer:
Thread chicken onto skewers with thyme sprigs tucked between pieces.
Serve:
Grill or broil for 12–15 minutes, turning occasionally, until cooked through and lightly charred.
