Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.
In a mixing bowl, combine Cairo Apiaries Raw Honey, olive oil, ground cinnamon, ground cumin, cayenne pepper (if using), and salt. Stir well to form a smooth mixture.
Add the drained and rinsed chickpeas to the bowl with the honey and spice mixture. Toss until all the chickpeas are evenly coated.
Spread the chickpeas out in a single layer on the prepared baking sheet. Make sure they are evenly spaced to allow for even roasting.
Place the baking sheet in the preheated oven and roast the chickpeas for about 35-40 minutes, or until they become golden brown and crispy. Make sure to shake the pan or stir the chickpeas every 15 minutes to ensure even cooking.
Once the chickpeas are roasted to perfection, remove them from the oven and let them cool completely on the baking sheet. They will become crispier as they cool.
Once cooled, transfer the honey-roasted chickpeas to an airtight container for storage or serve immediately. Enjoy as a tasty snack on their own or as a topping for salads, soups, or yogurt.
Store any leftovers in an airtight container at room temperature for up to a week. Note that the chickpeas may lose some of their crispness over time.
