Honey Tea Cake

Ingredients

  • 1/2 cup Cairo Apiaries Raw Honey
  • 1/2 cup unsalted butter at room temperature
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/4 cup sugar
  • sliced almonds for topping optional

Instructions

  • Preheat your oven to 350°F (180°C) and grease a 9-inch cake pan with butter or cooking spray.
  • In a mixing bowl, cream together the butter and honey until light and fluffy. Add in the eggs and vanilla extract and mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk and mixing until just combined.
  • Pour the batter into the prepared cake pan and sprinkle with sugar and sliced almonds, if using.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  • Serve and enjoy!

Notes

This honey tea cake can be served plain, or with a dollop of whipped cream or honey butter. You can also add a teaspoon of cinnamon or cardamom to the dry ingredients for an extra hint of spice.
