Ingredients

  • 1 large eggplant sliced into rounds
  • Cairo Apiaries Raw Honey
  • soy sauce (or tamari for gluten-free)
  • sesame oil
  • rice vinegar
  • 1 teaspoon salt
  • Red pepper flakes (optional)

Instructions

  • Prepare the Glaze
    In a bowl, mix honey, soy sauce, sesame oil, rice vinegar, salt and red pepper flakes.
  • Brush on Glaze
    Brush both sides of eggplant slices with the honey-soy mixture.
  • Preheat Oven
    Preheat the oven to 400°F (200°C).
  • Roast
    Roast for 15-20 minutes until tender and glazed.
  • Serve
    Serve as a flavorful and satisfying side.
