large eggplant
sliced into rounds
Cairo Apiaries Raw Honey
soy sauce (or tamari for gluten-free)
sesame oil
rice vinegar

salt
Red pepper flakes (optional)
Instructions
Prepare the Glaze
In a bowl, mix honey, soy sauce, sesame oil, rice vinegar, salt and red pepper flakes.
Brush on Glaze
Brush both sides of eggplant slices with the honey-soy mixture.
Preheat Oven
Preheat the oven to 400°F (200°C).
Roast
Roast for 15-20 minutes until tender and glazed.
Serve
